The World’s Best Cookies!
December 30, 2010

A friend from church made these amazing cookies and I just couldn’t keep them to myself!

Jen Wagner’s Chocolate Chip Cookies

Preheat oven to 350°F.

In a mixing bowl combine:
2 sticks of butter, melted and slightly cooled
¾ cup sugar
¾ cup brown sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla extract
1 tsp. almond extract (optional)
2 eggs

Mix above ingredients with a wire whisk until well blended. Next add:
2 cups whole wheat flour
1 cup oat flour (I grind rolled oats in the Magic Bullet)

Stir to combine with a wooden spoon. Then add:
1 cup chocolate chips (or more, if desired)
1 cup coconut
1 cup pecans, chopped finely in the Magic Bullet

Drop by teaspoonfuls onto cookie sheets and bake in a preheated oven for 7-10 minutes, until edges are just slightly browned. Cool on the cookie sheet for 1 minute.
When I made them, I left out the coconut and nuts b/c my husband isn’t a fan, and the recipe was still delicious. Enjoy!

Our Home
December 3, 2010

After tons and tons of work on our home, it’s starting to finally come together.  Some of these pictures are old, but they give an idea of how much work we’ve accomplished so far!   Only another 10 years or so and the house might be finished!
